Super Bowl or Soup Bowl? How about a healthy #vegan recipe for your Sunday?
Vegan Cauliflower Soup
1 large head of cauliflower (chopped)
1 onion (chopped)
4 cups veggie broth
1 cup soaked cashews
3 cloves garlic (minced)
Salt and Pepper to taste
Put all ingredients into a pot and bring to a boil. Reduce heat to simmer and stir occasionally until veggies are tender (approximately 20 minutes). When everything is cooked through, use an immersion blender to blend smooth or transfer in batches to a blender and carefully blend.
Topping ideas: avocado, nutritional yeast, pepper, hot sauce, sprouted sunflower seeds, cashew cream, pumpkin seeds
Pro Tip: Soak a large batch of cashews at once. When they’ve soaked overnight and you’ve rinsed and drained them, place into a glass container or ziplock bag and keep in the freezer to have on hand when you’re in need of a quick cashew cream.
